SAVORY ROSEMARY DIJON PORK TENDERLOIN
Simple to prepare, full of flavor—this dish is guaranteed to impress!
SERVES 4
30 minutes Prep & Cook Time
670 TO 770 Calories
INGREDIENTS
2 LB Pork Tenderloin
6 Tbsp French Style Dijon Mustard
4 Tbsp Extra Virgin Olive Oil
4 Tsp Garlic Cloves, minced
3 Pinches Black Pepper
3 Tbsp Fresh Rosemary, finely chopped
6 Sprigs Fresh Rosemary (for plattering)
1/2 Cup White Riesling Wine (Chateaux St. Michelle is a favorite)
DIRECTIONS
Preheat oven to 400 degrees.
Heat a large sauté pan over high heat with olive oil. Sear the pork tenderloin on all sides.
Season the pork tenderloin with pepper.
Mix the Dijon Mustard, Garlic Cloves and Rosemary in a bowl.
Place the pork tenderloin in a baking dish and spread the mustard mixture over the pork tenderloin then gently pour the wine over and around the pork and place in the oven.
Cook until the middle of pork reaches 160 degrees and desired doneness.
Remove from oven, let meat rest for a few minutes, then slice, platter and arrange fresh rosemary springs around meat, serve and enjoy.
