Blueberry Scones with Lemon Glaze
This is so easy to make and turns out perfectly every time!
SERVES 8
INGREDIENTS
Blueberry Scones
2 cups all-purpose flour (or 1:1 Gluten Free Flour)
1 Tbsp baking powder
2 Tbsp sugar
½ Tsp salt (optional if using salted butter)
2 Tbsp unsalted butter, cold, cut in chunks
1 cup fresh blueberries (you can substitute other fruit and even frozen is OK)
1 cup heavy cream, plus more for brushing the scones
Zest of 1 lemon (you can substitute lime or orange if you prefer)
Lemon Glaze
½ cup freshly squeezed lemon juice (you can substitute lime or orange if you prefer)
2 Tbsp milk or heavy cream
2 cups powdered sugar, sifted
1 Tbsp unsalted butter
1 lemon, zest finely grated
DIRECTIONS
Preheat oven to 400 degrees F.
Sift together the dry ingredients (flour, baking powder, salt, and sugar.) Using a fork or a pastry blender, cut in the butter to coat the pieces with the flour. The mixture should look like coarse crumbs. Fold the blueberries into the batter. Take care not to mash or bruise the blueberries because their strong color will bleed into the dough.
Make a well in the center and pour in the heavy cream. Fold everything together just to incorporate; do not overwork the dough.
Press the dough out on a lightly floured surface into a rectangle about 12” long x 3” wide x 2” thick. Cut the rectangle in half then cut the pieces in half again, giving you 4 (3” sized) squares. Cut the squares in half on the diagonal to give you the classic triangle shape. Place the scones on an ungreased cookie sheet. If using 1:1 Gluten Free Flour, allow the scones to sit for 45 minutes before baking as this helps refine the final texture. Brush the tops and sides with a little heavy cream.
Bake for 15 to 20 minutes until beautiful and brown. Let the scones cool a bit before you apply the glaze.
To make the glaze, in a sauce pan over medium heat, mix the lemon juice and milk/heavy cream with the powdered sugar until dissolved. If you like a thicker glaze, add more powdered sugar. Whisk in the butter and lemon zest. Whisk until the butter is melted and the glaze is smooth. Drizzle the glaze over the scones and let it set a minute before serving.
