HIGHLANDS RANCH IN BLOOM

Native Propagation and Culinary Inspiration

With spring around the corner, it’s the perfect time to add hardy, beautiful natives to your landscape. Two exceptional plants thriving in and around Highlands Ranch are the Prickly Pear Cactus and Soapweed Yucca (small soapweed yucca). Both are well suited to our Montana climate, offering sculptural form, striking blooms, and excellent drought tolerance—while naturally complementing the surrounding terrain.

Prickly pear is not only ornamental but also edible. The pads (“nopales”) and fruit (“tunas”) are rich in fiber and antioxidants and can be grilled, sautéed, or made into syrups and jellies once properly cleaned of spines.

RECIPE OF THE MONTH:

CARBONARA MEDIA MAGNO PASTA

Recipe courtesy of The Pasta Queen—This pasta dish is so easy and quick to make and it will bring tears to your eyes and have everyone begging for more.

Serves 4 to 6

INGREDIENTS

  • 1 Package Angel Hair Pasta

  • 6 to 8 slices Pepper Bacon (well marbleized)

  • 1 cup Picorino Romano, extra finely grated

  • 2 Egg Yolks

  • 1 Whole Egg

  • Fresh Pepper Corns

  • Salt to taste

  • Extra Virgin Olive Oil  

INSTRUCTIONS

Bring a pot of salted water with a splash of olive oil to a boil. Add pasta and cook until al dente.

Meanwhile, cut pepper bacon into ½-inch pieces and brown in a large saucepan over medium-high heat. Remove and set aside.

In a bowl, whisk 2 egg yolks, 1 whole egg, and finely grated pecorino romano until smooth and creamy. Stir in crushed peppercorns.

Return pasta to the bacon pan, add ¾ of the bacon and the egg-cheese mixture. Stir gently, adding a few tablespoons of pasta water to create a silky sauce that completely coats the pasta.

Using tongs, twirl pasta into a large ladle to shape servings resembling Mount Vesuvius and top each mound with remaining bacon then finish with a drizzle of olive oil.
